Title:Vpliv sorte na vsebnost vitamina C v plodovih paradižnika (solanum lycopersicum)

Abstract:Povzetek, Paradižnik je bogat vir vitamina C, ki ima pozitiven vpliv na zdravje ljudi. Namen magistrskega dela je bil preučiti vpliv sorte in barve paradižnika na vsebnost vitamina C. V raziskavo smo vključili belo, rumeno, oranžno, rdeče, vijolično in zeleno obarvane plodove 38 različnih sort paradižnika. Vitamin C smo iz vzorcev ekstrahirali s 3 % raztopino metafosforjeve kisline. Po redukciji dehidroaskorbinske kisline z raztopino ditiotreitola smo izmerili vsebnost skupnega vitamina C s tekočinsko kromatografijo v povezavi s PDA-detektorjem. Rezultati so pokazali, da je vsebnost vitamina C najvišja v rdeče obarvanih plodovih in najnižja v plodovih vijolične barve. Najvišjo koncentracijo vitamina C smo izmerili v sorti 'Ded Moroz'.

Title:Cultivar effect on vitamin C content in tomato (solanum lycopersicum) fruits
Abstract:Abstract, Tomatoes are a rich source of vitamin C, which has a proven positive effect on human health. The aim of this study was to examine the influence of the individual tomato variety and color on the content of vitamin C. The study included white, yellow, orange, red, purple, and green colored fruits of 38 different tomato varieties. In order to extract the vitamin C from the samples, a 3% solution of metaphosphoric acid was used. After reducing the dehydroascorbic acid with a dithiothreitol solution, the total vitamin C content was measured with the help of liquid chromatography in conjunction with a PDA detector. The results showed that the content of vitamin C is highest in red-colored fruits and lowest in fruits with purple color. The highest concentration of vitamin C was measured in the variety 'Ded Moroz'.
