Abstract:
Ostrigarji spadajo med najbolj masovno gojene gobe na svetu. Odlikujejo jih enostavno gojenje, odlične kulinarične lastnosti in prebavljivost ter za gojitelja ugodna cena, ki jo dosegajo na trgu. Na zgrajeni mikrogobarni smo naredili poskus, s katerim smo primerjali produktivnost in biološko učinkovitost dveh izolatov ostrigarja (H35 in Plo5). Rezultati raziskave kažejo, da v produktivnosti statistično značilnih razlik med izolatoma ni (povprečni pridelek 1.315 g; biološka učinkovitost 94 %). Rezultate, dobljene v poskusu, smo kot vhodne podatke uporabili pri različnih kalkulacijskih modelih (modeli 1 – 5). V modele kalkulacij skupnih stroškov smo vstavljali različne ekonomske parametre s ciljem oceniti ekonomsko upravičenost proizvodnje ostrigarjev in določiti njeno prelomno točko. Z upoštevanjem postopkov pridelave gob so se izboljšale tudi ocene analiziranih ekonomskih parametrov. Pri modelu 5 smo dosegli najboljše ocene ekonomskih parametrov (lastna cena, LC = 3,43 evrov; vrednost proizvodnje, VP = 445,45 evrov; finančni rezultat, FR = 199,04 evrov; koeficient ekonomičnosti, Ke = 1,81; prelomna točka proizvodnje, PTP = 30,8 kg), in sicer ob upoštevanju polne zasedenosti prostora, z uporabo polovične količine lastnega micelija (glede na model 1) in s spoštovanjem certificirane ekološke pridelave gob (višja cena). Simulacijski model 5 smo uporabili za oceno letnega denarnega toka (LTD), s pomočjo katerega smo ocenili tudi obdobje povratka investicije (PS = 4 mesece in 9 dni).

Title:
Experimental Cultivation of Pleurotus Mushroom on an Organic farm with an Economic Assesment
Abstract:
Oyster mushrooms are one of the most cultivated mushrooms in the world, characterized by their easy cultivation, excellent culinary properties and digestibility, and a good price achieved on the market. An experiment was performed on a micro-mushroom farm, where we compared the productivity and biological efficiency of two oyster isolates (H35 and Plo5). The results show that there are no statistically significant differences in productivity between isolates (average yield 1.315 g; biological efficiency 94 %). The results obtained in the experiment were used in different simulation models (model 1 - 5). Different technological parameters were used in the models in order to optimize the production of mushrooms. In model 5, the best estimates of economic parameters were obtained (LC = 3,43 €, VP = 445,45 €, FR = 199,04 €, Ke = 1,808 and PTP = 30.8 €/kg), taking into account the full occupancy of the space, the use of own mycelium, use of half of the quantity of the mycelium (compared to model 1) and certified organic production (higher price of mushrooms). Simulation model 5 was used for the calculation of annual cash flow (ACF). With the ACF and the costs of investment in the construction of the micro-mushroom farm, the return period of the investment (PS = 4 months and 9 days) was calculated.
