Title:OPTIMIRANJE PROCESNIH PARAMETROV IN SESTAVE FERMENTACIJSKEGA MEDIJA ZA PROIZVODNJO KEFIRANA IZ NARAVNIH KEFIRNIH ZRN

Abstract:V diplomskem delu opisujemo potek določanja optimalnih procesnih parametrov in sestave fermentacijskega medija za proizvodnjo kefirana iz naravnih kefirnih zrn. Vse eksperimente smo opravljali v laboratorijskem šaržnem reaktorju (reakcijski kalorimeter RC1). Eksperimentalni del diplomske naloge je bil sestavljen iz dveh delov. V prvem delu smo preučevali vpliv temperature fermentacije in vrtilne frekvence mešala oz. režima mešanja na prirast kefirnih zrn in proizvodnjo kefirana. Izvajali smo 24-urne fermentacije. Vrednosti procesnih parametrov, pri katerih smo dobili najvišji donos kefirana, smo uporabili v drugem delu eksperimentalnega dela, v katerem smo optimirali sestavo fermentacijskega medija. Pri tem smo preučili vpliv različnih vrst rastnih dodatkov (sladkorjev, dušikovih spojin in vitaminov) na prirast kefirnih zrn in proizvodnjo kefirana. Uspešno smo povišali proizvodnjo kefirana z optimiranjem procesnih parametrov in dodatkom sladkorjev, medtem ko smo bili pri preučevanju vpliva dušikovih spojin in vitaminov na proizvodnjo kefirana manj uspešni.

Title:OPTIMIZATION OF PROCESS PARAMETERS AND COMPOSITION OF FERMENTATION MEDIUM FOR KEFIRAN PRODUCTION FROM NATURAL KEFIR GRAINS
Abstract:This diploma work describes the determination of the optimum process parameters and composition of fermentation medium for kefir grains and kefiran production. All experiments have been carried out in a laboratory batch reactor (reaction calorimeter RC1). The experimental part of this work consists of two parts. In the first part we studied the effect of fermentation temperature and stirrer speed or different mixing regime on kefir grains growth and kefiran production. The fermentation of each experiment lasted 24 hours. The values of process parameters, where we get the highest concentration of kefiran, we used in the second part of experimental work in which we optimized the fermentation medium composition. Here we examine the growing influence of various additives (sugars, nitrogen compounds and vitamins) to increase the production of kefir grains and kefiran. We have successfully increased production kefiran by optimizing process parameters and addition of sugars, while we were examining the impact of nitrogen compounds and vitamins to produce kefiran less successful.
