Title:Vsebnost sladkorjev in organskih kislin v socvetjih in jagodah bezga

Abstract:Namen raziskave je bil določiti vsebnost posameznih in skupnih sladkorjev ter organskih kislin v socvetjih in jagodah nekaterih vrst ter medvrstnih križancev bezga. Koncentracije sladkorjev in organskih kislin v vodnih ekstraktih smo določili s tekočinsko kromatografijo. V socvetjih je prevladovala jabolčna kislina s povprečno vrednostjo 1,49 g/100 g suhe snovi. Genotip z najvišjo vsebnostjo jabolčne kisline v socvetjih je bil križanec (JA × NI) × NI2 (2,42 g/100 g). V jagodah je bila najbolj zastopana citronska kislina (3,86 g/100 g), sledile so jabolčna, šikimska in fumarna s povprečnimi vrednostmi 1,34 g/100 g, 25,57 mg/100 g in 5,45 mg/100 g (suhe snovi). Med genotipi sta glede na najnižje in najvišje vsebnosti citronske kisline v jagodah izstopala (JA × NI) × RAC (0,004 g/100 g) in (JA × NI) × CER (1,35 g/100 g). Povprečna vsebnost glukoze in fruktoze v socvetjih je bila 3,04 g/100 g in 2,36 g/100 g (suhe snovi) in v jagodah 15,35 g/100 g in 6,87 g/100 g (suhe snovi). Najnižjo vsebnost glukoze v bezgovih socvetjih smo določili v genotipu JA × (JA × NI)1 najvišjo v (JA × NI) × (CER × NI). Spermanov korelacijski koeficient ni pokazal značilne korelacijske povezanosti med vsebnostjo kislin in sladkorjev v socvetjih in jagodah.

Title:Sugar and Organic Acis Content in Elderberry Flowers and Fruits
Abstract:The purpose of this research was to determine the content of individual and total sugars and organic acids in inflorescences and fruits of different elderberry genotypes. The concentrations of sugars and organic acids in the aqueous extracts were determined using liquid chromatography. The dominant acid in the inflorescence extracts was malic acid, with an average value of 1.49 g/100 g of dry weight. The genotype with the highest malic acid content in elder inflorescence extracts was the interspecific hybrid (JA × NI) × NI2 (2.42 g/100 g). The most abundant acid in elderberry fruits was citric acid (3.86 g/100 g), followed by malic, shikimic and fumaric acid, with an average content of 1.34 g/100 g, 25.57 mg/100 g and 5.45 mg/100 g (dry weight) respectively. The lowest content of citric acid was determined in fruit extracts of (JA × NI) × RAC (0.004 g/100 g) and the highest in the genotype (JA × NI) × CER (1.35 g/100g). The average glucose and fructose contents in inflorescence extracts were 3.04 g/100 g and 2.36 g/100 (dry weight) and in fruits extracts 15.35 g/100 g and 6.87 g/100 g (dry weight) respectively. The lowest content of glucose was determined in the genotype JA × (JA × NI)1 and the highest in (JA × NI) × (CER × NI). Spearman’s correlation coefficient did not reveal any significant correlation between the content of total acids or sugars in aqueous extracts of elder inflorescences and fruits.
