Title:ŽIVALI V KULINARIČNEM DISKURZU: PRIMERI IZ SLOVENSKIH KUHARSKIH KNJIG

Abstract:Diplomsko delo se umešča na področje kritičnih animalističnih študij. Ukvarja se z diskurzivnimi postopki ontološkega preoblikovanja živali v kulinaričnem diskurzu. Kritično analizira diskurz slovenskih kuharskih knjig, in sicer zajame v obravnavo kuharske knjige od razsvetljenstva, ko je izšla prva kuharska knjiga v slovenščini, do danes. S pomočjo teoretskega modela Carol Adams (2009) prikažemo, kako se v kuharskih receptih s postopki popredmetenja, fragmentacije in konzumacije živali strukturira nasilje. Ugotavljamo, da recepti v kuharskih knjigah starejših obdobij vsebujejo nazorne opise zakola in razkosavanja živali, kakor tudi neposredne reference na ubite živali in njihove dele. Analiza kaže na postopno večanje posrednih referenc in evfemističnih poimenovanj, prav tako s časom iz postopkovnih opisov izginjata popredmetenje in fragmentacija ter v tej strukturi žival kot živo bitje izginja iz referenčnega polja, posledično pa tudi iz naše zavesti. Trdimo, da se potreba po zakrivanju povezave med živaljo in konzumiranim objektom oblikuje sočasno z rejo živali v industrijskih obratih, kapitalistično hipereksploatacijo in poblagovljenjem živali. S tem, ko živali izginjajo tako dobesedno kot konceptualno, da postanejo naša hrana, se omejujejo tudi možnosti potrebnega etičnega premisleka o uporabi in zlorabi živali za človeško prehrano. S tem diplomskim delom si tako prizadevamo oblikovati poziv k vključitvi vidika živali v koncept prehranske pravičnosti.

Title:ANIMALS IN CULINARY DISCOURSE: EXAMPLES FROM SLOVENIAN COOKBOOKS
Abstract:This graduation thesis pertains to the field of critical animal studies. It deals with discursive processes of ontological transformation of animals in culinary discourse. It offers a critical discourse analysis of Slovenian cookbooks; namely, it discusses various cookbooks, from those written in the Age of Enlightenment, when the first Slovenian cookbook was published, to those of the present day. The theoretical model of Carol Adams (2009) helps us demonstrate how violence is structured in cooking recipes through the processes of objectification, fragmentation and consumption of animals. We have established that the recipes which can be found in cookbooks from earlier periods contain graphic descriptions of slaughter and dismemberment of animals as well as direct references to slaughtered animals and their body parts. The analysis shows a gradual increase of indirect references and euphemistic expressions; furthermore, with time, the objectification and fragmentation start to disappear from cooking instructions, just as the animal as a living being disappears from the referential field in this structure and, consequently, from our consciousness. We claim that the need to obscure the connection between an animal and a consumed object forms simultaneously with the breeding of animals on industrial farms as well as with capitalistic hyper-exploitation and commodification. Animals disappear literally and conceptually in order to become our food, and with that, the possibilities for the necessary ethical consideration on the use and abuse of animals in the human diet are also becoming ever more limited. With this graduation thesis we therefore aim to formulate an appeal that the view on animals is to be included into the concept of food justice.
