Title:Vloga JRE Slovenija pri razvoju trajnostne gastronomije v Sloveniji : diplomsko delo visokošolskega strokovnega študija

Abstract:Zaključno delo raziskuje vlogo združenja JRE Slovenija pri razvoju trajnostne gastronomije ter način, kako njegovi člani vključujejo trajnostne prakse v svoje vsakodnevno delovanje. S kvalitativno metodo polstrukturiranih intervjujev in s SWOT analizo so bile pridobljene poglobljene ugotovitve, ki razkrivajo raznolikost pristopov k trajnosti – od zmanjševanja odpadkov, digitalizacije procesov, sodelovanja z lokalnimi dobavitelji, do ohranjanja kulinarične dediščine. Analiza kaže, da je trajnost med člani JRE Slovenija pogosto globoko zasidrana kot osebna vrednota, kar se izraža v številnih inovativnih praksah. Kljub temu pa ostaja izziv pomanjkanje enotne strategije in skupne komunikacije navzven. Zaključno delo zato ponuja priporočila za okrepitev povezovanja med člani, za bolj strukturirano promocijo trajnostnih praks in za krepitev vloge združenja kot vodilnega akterja na področju trajnostne gastronomije v Sloveniji.

Title:The role of JRE Slovenia in the development of sustainable gastronomy in Slovenia
Abstract:The final thesis explores the role of JRE Slovenia in the development of sustainable gastronomy and the way its members integrate sustainable practices into their daily operations. Through qualitative semi-structured interviews and a SWOT analysis, indepth findings were obtained, revealing a diversity of approaches to sustainability - from waste reduction, digitisation of processes, collaboration with local suppliers, to preservation of culinary heritage. The analysis shows that sustainability is often deeply rooted as a personal value among JRE Slovenia members, which is reflected in a number of innovative practices. Nevertheless, the lack of a unified strategy and common communication externally remains a challenge. The final thesis therefore offers recommendations to strengthen networking among members, to promote sustainable practices in a more structured way and to strengthen the role of the association as a leading actor in the field of sustainable gastronomy in Slovenia.
