Title:Določanje težkih kovin v različnih sladolednih izdelkih z ICP-MS

Abstract:V diplomskem delu smo za določanje Al, As, Ba, Cd, Co, Cr, Cu, Fe, Ga, Mn, Mo, Ni, Pb, Sn, Sr, Tl in Zn v različnih sladolednih izdelkih uporabili tehniko induktivno sklopljene plazme z masno spektrometrijo. Sladoledne izdelke smo razklopili z mikrovalovnim kislinskim razklopom z uporabo HNO3, H2O2 in ultra čiste vode. Izvedli smo delno validacijo metode z določitvijo meje zaznavnosti, meje določljivosti, linearnega koncentracijskega območja, točnosti in natančnosti. Linearnost metode smo potrdili z določitvijo kvadrata korelacijskega koeficienta (R2) s kriterijem R2 ≥ 0,9900. Točnost metode smo preverili z izračunom izkoristka za realne vzorce z dodatkom znane množine analita (Re) in izkoristka raztopin standardov (Rec) na več koncentracijskih nivojih določenega linearnega koncentracijskega območja. Z vrednostmi Re in Rec znotraj zastavljenega kriterija (med 80,0 % in 120,0 %) smo potrdili točnost metode. Natančnost metode smo potrdili z izračunom relativnih standardnih odmikov, katerih vrednosti so morale biti nižje ali enake kriteriju 20,0 %. Točnost s številom injiciranj med meritvami smo preverjali z merjenjem raztopine standarda z določeno koncentracijo 40,0 µg/L. Določili smo vsebnosti težkih kovin v ng/g zatehte sladolednega izdelka in vsebnosti primerjali z mejnimi vrednostmi za težke kovine v mleku in mlečnih izdelkih, ki jih postavljajo različni regulativni organi. Med seboj smo primerjali lokalne (sladoledni izdelki, kupljeni v slaščičarnah, kioskih, stojnicah) in industrijske sladoledne izdelke (sladoledni izdelki, kupljeni v trgovinah), veganske in mlečne sladoledne izdelke, sladoledne izdelke različnih proizvajalcev ter različnih okusov. Ugotovili smo, da so najvišje vsebnosti težkih kovin imeli čokoladni sladoledni izdelki.

Title:Determination of heavy metals in various ice cream products by ICP-MS
Abstract:In this thesis, the inductively coupled plasma mass spectrometry was used for the determination of Al, As, Ba, Cd, Co, Cr, Cu, Fe, Ga, Mn, Mo, Ni, Pb, Sn, Sr, Tl, and Zn in various ice cream products. The ice cream products were digested by microwave-assisted wet acid digestion using HNO3, H2O2, and ultrapure water. Partial validation of the method was performed by determining the limit of detection, limit of quantification, linear concentration range, accuracy, and precision. The linearity of the method was confirmed by determining the squares of the correlation coefficient (R2) with a criterion of R2 ≥ 0.9900. The accuracy of the method was verified by the spike recovery test (Re) and the recovery of solutions of standard (Rec) on several concentration levels of the determined linear concentration range. The accuracy of the method was confirmed with Re and Rec values within the selected criterion (between 80.0% and 120.0%). The precision of the method was confirmed by calculating the relative standard deviations, which had to be less than or equal to 20.0%. The accuracy of the method with the number of injections was determined by measurements of the solution of standard with a concentration of 40.0 µg/L. The heavy metal content was determined in ng/g of ice cream product and compared with the maximum levels for heavy metals in milk and dairy products set by different regulatory agencies. Local (ice cream products bought in confectionery shops, kiosks, stands) and industrial ice cream products (ice cream products bought in shops), vegan and dairy ice cream products, ice cream products from different manufacturers, and ice cream products of different flavours were compared with each other. We determined that chocolate ice cream products contained the highest levels of heavy metals.
