Title:Določevanje težkih kovin v zelenjavi z ICP-MS

Abstract:V diplomskem delu smo izvedli delno validacijo metode za simultano določevanje 18 težkih kovin (Al, As, Ba, Cd, Co, Cr, Cu, Fe, Ga, Mn, Mo, Ni, Pb, Se, Sn, Sr, Tl in Zn) v 54 vzorcih zelenjave z induktivno sklopljeno plazmo z masno spektrometrijo. Določili smo mejo zaznavnosti, mejo določljivosti, linearno koncentracijsko območje, točnost in natančnost. Vzorce zelenjave smo posušili, homogenizirali in nato izvedli popoln mikrovalovni razklop. Določili smo vsebnost težkih kovin v ng/g suhe mase zelenjave in te vsebnosti primerjali z zgornjimi mejnimi vrednostmi določenimi s strani mednarodnih organizacij, ki delujejo na področju prehrane. Vzorce zelenjave smo pridobili iz dveh različnih krajev (Maribora in Slovenj Gradca) v dveh različnih trgovinah (trgovina A in trgovina B), kjer smo primerjali zelenjavo tako slovenskega kot tujega izvora. Primerjali smo tudi zelenjavo z domačega vrta in zelenjavo, kupljeno v že omenjenih trgovinah. Ugotovili smo, da največ zgornjih mejnih vrednosti presega bučka iz Španije. Za Ba je bila izmed vseh težkih kovin v različnih vzorcih zelenjave največkrat presežena zgornja mejna vrednost. Vsebnost As je dvakrat presegla zgornjo mejno vrednost, in sicer v čebuli nizozemskega porekla kupljeni v trgovini A v Slovenj Gradcu in čebuli avstrijskega porekla, kupljeni v trgovini B v Slovenj Gradcu. Za Cd je bila v 5 vzorcih zelenjave presežena zgornja mejna vrednost, od tega so bili 3 vzorci z domačega vrta, 2 pa kupljena v trgovini A v Mariboru in trgovini B v Mariboru. Vsebnosti Pb in Sn nismo kvantitativno določili v nobenem vzorcu zelenjave.

Title:Determination of heavy metals in vegetables by icp-ms
Abstract:In this thesis, a partial validation of method for the simultaneous determination of 18 heavy metals (Al, As, Ba, Cd, Co, Cr, Cu, Fe, Ga, Mn, Mo, Ni, Pb, Se, Sn, Sr, Tl, and Zn) in 54 vegetable samples was performed using inductively coupled plasma-mass spectrometry. The limit of detection, limit of quantification, linear concentration range, accuracy, and precision of the method were determined. The vegetable samples were dried, homogenized and digested using microwave acid digestion. The heavy metal content in vegetable samples was determined and reported in ng/g of dry weight, followed by comparison with the upper limits set by international organizations and national authorities working in the field of food safety. Vegetable samples were obtained from two different locations (Maribor and Slovenj Gradec) and two different stores (A and B), allowing for a comparison between Slovenian and imported products, as well as between home-grown and store-bought vegetables. Our findings indicated that zucchini from Spain exceeded most upper limit values. The upper limit value was exceeded most frequently for Ba. The upper limit value was exceeded for As twice – in an onion of Dutch origin and in an onion of Austrian origin purchased from store A in Slovenj Gradec and store B in Slovenj Gradec. For Cd, the upper limit value was exceeded in 5 vegetable samples, 3 of which were from the home garden and 2 were purchased from store A in Maribor and store B in Maribor. Pb and Sn were not detected in quantifiable amounts in any of the vegetable samples.
