Title:Določanje težkih kovin z metodo ICP-MS v vzorcih najbolj prodajanih prehranskih dodatkov v času epidemije Covid-19 in ocena kontaminacije : magistrsko delo

Abstract:Uporaba prehranskih dodatkov je v zadnjih desetletjih po vsem svetu v porastu. Še posebej v času pandemije Covid-19 so prehranski dodatki postali izjemno pogost del vsakodnevne prehrane ljudi. S trendom naraščajoče uporabe in zaradi težav z regulacijo, nadzorom, kakovostjo ter učinkovitostjo prehranskih dodatkov se je pojavila potreba po analizi in ugotavljanju, ali prehranski dodatki morda vsebujejo nedovoljene količine zdravju škodljivih spojin, vključno s težkimi kovinami. V magistrskem delu smo analizirali vsebnost kovin v 17 komercialno dostopnih vzorcih prehranskih dodatkov. Vse vzorce prehranskih dodatkov smo razvrstili v 6 skupin - dodatki na osnovi: 1) vitaminov/mineralov; 2) izvlečkov rastlin; 3) zeolitov; 4) alg; 5) gob in 6) omega-3 maščobnih kislin. Koncentracije 13 kovin (Ag, As, Ca, Cd, Cr, Cu, Fe, K, Mg, Mn, Na, Pb, Zn) smo določili z masno spektrometrijo z induktivno sklopljeno plazmo (ICP-MS). V določenih vzorcih smo tudi merili vsebnost živega srebra z atomsko absorpcijsko spektrometrijo s toplotno razgradnjo in amalgamacijo (TDA-AAS). Določili smo, da je en vzorec vseboval svinec nad mejno vrednostjo (izmerjena presežena vrednost je bila v vzorcu prehranskega dodatka na osnovi zeolita in je znašala 11,7 mg/kg). Rezultati za vsebnost ostalih kovin so bili v skladu z vrednostmi, predpisanimi z nacionalno in tujo zakonodajo, ali predpisanimi s strani različnih institucij. Z magistrsko nalogo smo poudarili pomembnost preverjanja kakovosti prehranskih dodatkov, najprej zaradi zagotavljanja njihove neonesnaženosti, nato pa tudi zaradi preprečitve zavajajočih trditev o prehranskih dodatkih in zaščite potrošnikov.

Title:Determination of heavy metals by the method ICP-MS in samples of top-selling dietary supplements during the Covid-19 epidemic and assessment of contamination
Abstract:The use of dietary supplements has been on the rise all over the world in recent decades, and dietary supplements have become an extremely common part of people's daily diet, especially during the Covid-19 pandemic. With the growing trend of use and problems with regulation, control, quality and effectiveness of dietary supplements, there has been a need to analyze and determine whether dietary supplements may contain impermissible amounts of harmful compounds, including heavy metals. In the master's thesis, we determined the metal content in 17 commercially available samples of dietary supplements. We classified all samples of dietary supplements into 6 groups - supplements based on: 1) vitamins/minerals; 2) plant extracts; 3) zeolites; 4) algae; 5) mushrooms and 6) omega-3 fatty acids. The concentrations of 13 metals (Ag, As, Ca, Cd, Cr, Cu, Fe, K, Mg, Mn, Na, Pb, Zn) were determined by inductively coupled plasma mass spectrometry (ICP-MS). Mercury content was also determined in certain samples by thermal decomposition and amalgamation atomic absorption spectrometry (TDA-AAS). It was determined that one sample contained lead above the limit value (the measured exceeded value was in a sample of a zeolite-based dietary supplement and was 11,7 mg/kg). The results for the content of other metals were in accordance with the values prescribed by national and foreign legislation or prescribed by various institutions. With this research, we emphasized the importance of verification the quality of dietary supplements, first of all to ensure their non-contamination, but also to prevent misleading claims about nutritional supplements and to protect consumers.
