Title:Vpliv medvrstne hibridizacije na kemijsko sestavo bezgov : doktorska disertacija

Abstract:V doktorski disertaciji je predstavljen vpliv procesa zorenja, genotipa in rastlinskega dela na kemijsko sestavo bezga. Kemijska sestava (vlaga, vsebnosti glukoze in fruktoze, skupnih antocianinov, skupnih fenolov, šikimske kisline, oksalatov, razmerje med skupnimi sladkorji in organskimi kislinami ter antioksidativni potencial) bezgovih jagod je odvisna od stopnje zrelosti. Popolnoma zreli bezgovi plodovi so v primerjavi z ostalimi zrelostnimi stopnjami dosegli najboljšo kakovost, vendar je bila vsebnost večine analiziranih spojin podobna tudi v skoraj zrelih plodovih, zato lahko priporočamo tudi zgodnejše pobiranje plodov. Z izboljšano kemijsko sestavo so se izkazali plodovi nekaterih genetskih kombinacij s črnim bezgom (S. nigra), njegovo kultivirano varieteto (S. nigra 'Black Beauty'), in varieteto rdečega bezga (S. racemosa var. miquelii). Kot superiorni so izstopali genotipi JA × NI, JA × (JA × NI), NI, ((JA × NI) × MIQ) × (CER × NI), (JA × NI) × BB, (JA × NI) × MIQ in JA × (JA × MIQ). Peclji plodov, korenine, listi in skorja so se izkazali kot boljši vir večine preučevanih mineralov v primerjavi s socvetji, slednja so se izkazala z višjimi vsebnostmi mineralov kot jagode. Kljub temu vsebnost mineralov v jagodah ni zanemarljiva in je primerljiva z drugim bolj pogosto uporabljenim jagodičevjem. Medvrstne hibride z visoko vsebnostjo jabolčne, šikimske in fumarne kisline, celokupne askorbinske kisline, skupnih in posameznih flavonolov ter fenolnih kislin, nekaterih mineralov, skupnih, netopnih in vodotopnih oksalatov ter visokim AOP v popolnoma zrelih plodovih lahko predvidimo vnaprej, na osnovi analiz njihovih nezrelih plodov. Podobno lahko genotipe z visoko/nizko vsebnostjo mineralov v socvetjih in jagodah napovemo na začetku vegetacijske dobe na podlagi znane mineralne sestave njihovih poganjkov in listov.

Title:Elderberry Interspecific Hybridisation and its Impact on Plant Chemical Composition
Abstract:The dissertation deals with the influence of the maturation process, genotype and plant part on the chemical composition of elderberries. The chemical composition (moisture, content of glucose, fructose, total anthocyanins, total phenolics, shikimic acid, oxalates, ratio between total sugars and organic acids and antioxidant activity) of elderberries depends on the maturity stage. Fully mature elderberries were characterised with better quality compared to other maturity stages, however, the content of most analysed compounds was similar in almost ripe fruits, so earlier harvesting can also be recommended. The fruits of some genetic combinations including black elderberry (S. nigra), its cultivated variety (S. nigra 'Black Beauty') or the variety of red elderberry (S. racemosa var. miquelii) showed improved chemical composition. The genotypes JA × NI, JA × (JA × NI), NI, ((JA × NI) × MIQ) × (CER × NI), (JA × NI) × BB, (JA × NI) × MIQ and JA × (JA × MIQ) were found to be superior genotypes. Elderberry fruit stalks, leaves, roots and, bark contained higher levels of most minerals studied compared to inflorescences, and inflorescences were found to be a better source of minerals than berries. Nevertheless, the mineral content in elderberries is comparable to that of other commonly consumed berries. Interspecific hybrids high in malic acid, shikimic acid, fumaric acid, total ascorbic acid, total and individual flavonols and phenolic acids, some minerals, total, insoluble and water-soluble oxalates, and high AOA in fully mature berries can be predicted in advance (based on analysis of their unripe fruits). Similarly, genotypes with high/low mineral content in inflorescences and berries can be predicted based on the known mineral composition of their shoots and leaves.
