Title:Suspenzije naravnih barvil: vpliv surovin, hidrokoloidov ter antioksidantov na kvaliteto končnih produktov : magistrsko delo

Abstract:Mnoga podjetja so se v zadnjih letnih usmerila v razvoj naravnih barvil, saj ljudje dandanes izbirajo hrano in pijačo, ki vsebuje čim manj umetnih snovi. Vitiva d.d. je podjetje, kjer se ukvarjajo z razvojem tekočih in praškastih produktov iz naravnih pigmentov. Ker omenjenega področja še niso imeli popolnoma raziskanega, smo se v okviru magistrskega dela ukvarjali z razvojem suspenzij in praškastih produktov iz kurkumina, ß karotena in annatta. Večina naravnih pigmentov je v njihovi naravni obliki nestabilnih, vendar jih je mogoče z uporabo ustreznih tehnoloških operacij pretvoriti v stabilnejšo obliko. Enkapsulacija je metoda, ki omogoča zaščito naravnih pigmentov, saj se aktivna komponenta ujame v sekundarni material. Eksperimentalni del je zajemal razvoj tekočih in praškastih formulacij s pomočjo testiranja različnih hidrokoloidov (gumi arabika, modificiran škrob (HI CAP in Purity gum), pektin, citrusne vlaknine), različnih medijev (saharoza, glicerol, maltodekstrin, glukozni sirup), stabilizacije z različnimi antioksidanti (askorbinska kislina, mešani tokoferoli 70, Inolens 4 ali rožmarinov ekstrakt) za različne izbrane pigmente (kurkumin, ß karoten, annatto). Suspenzije smo pripravili s krogličnim mlinom (bead mill), praškaste produkte pa z razpršilnim sušilnikom (spray dryer). Pripravljenim suspenzijam in prahom smo določili vsebnost kurkumina, ß karotena ali biksina. Z analizatorjem velikosti delcev (PSD) smo izmerili velikost ter določili porazdelitev delcev v suspenziji. Obstojnost in intenzivnost pigmenta smo preverili v dveh aplikacijah. V magistrskem delu smo dokazali, da so raztopine iz enkapsuliranih pigmentov veliko bolj intenzivne barve, kot pa raztopine iz osnovnega pigmenta. Ugotovili smo, da se je kot najprimernejši hidrokoloid izkazal modificiran škrob HI CAP. Citrusne vlaknine in pektin pa smo izločili iz nabora ustreznih hidrokoloidov, saj je suspenzija iz omenjenih hidrokoloidov na krogličnem mlinu postala zelo viskozna. Za najustreznejši medij smo izbrali saharozo in glukozni sirup, saj so raztopine, ki so vsebovale omenjena medija, bile najdlje časa intenzivne barve. Pri določevanju ustreznega antioksidanta v raztopinah ß karotena smo ugotovili, da so se najbolje izkazali mešani tokoferoli s koncentracijo 1750 ppm, glede na pigment.

Title:Suspensions of natural colorants: the impact of raw materials, hydrocolloids and antioxidants on the quality of products
Abstract:In the past few years many companies have been directed into development of natural pigments, since people nowadays choose food and drinks that contain as little artificial substances as possible. Vitiva d. d. is a company which develops liquid and powder products from natural pigments. This field has not yet been fully researched, therefore we started in the course of the master’s thesis with the development of suspensions and powder products from curcumin, beta carotene and annatto. Most of the natural pigments are in their natural form unstable, nevertheless they can be changed into a more stable form by using proper technological operations. Encapsulation is a method which enables the protection of natural pigments, because the active component catches the secondary material. The experimental part includes the development of liquid and powder formulations by testing different hydrocolloids (gum Arabic, modified starch (HI CAP and Purity gum), pectin, citrus fibres), different media (sucrose, glycerol, maltodextrin, glucose syrup), stabilisation with different antioxidants (ascorbic acid, mixed tocopherols 70, Inolens 4 or rosemary extract) for different chosen pigments (curcumin, beta carotene, annatto). The suspensions were prepared with a bead mill and the powder products with a spray dryer. We defined the content of curcumin, beta carotene and bixin in the prepared suspensions and powders. The size and distribution of the parts in the suspension were measured with a particle size analyser (PSD). The pigment durability and intensity were tested in two applications. In the thesis we have proved that the solutions from encapsulated pigments tend to yield a much more intensive colour than the solutions from basic pigments. It has been established that the best hydrocolloid is a modified starch HI CAP. The citrus fibres ad pectin have been eliminated from the collection of adequate hydrocolloids, while the suspension from the mentioned hydrocolloids became very viscid in the bead mill. Sucrose and glucose syrup have been chosen as the most suitable media, since the solutions that contained the mentioned media had the most intensive colour for the longest time. By defining the appropriate antioxidant in the solutions of beta carotene it has been established that mixed tocopherols with a concentration of 1750 ppm are the best considering the pigment.
