Title:Določanje optimalnih pogojev za razmnoževanje biomase vodnega kefirja : diplomsko delo univerzitetnega študijskega programa I. stopnje

Abstract:Diplomsko delo opisuje študijo določanja optimalnih pogojev za razmnoževanje biomase vodnega kefirja. Prikazan je vpliv vrste vode, mešanja, dodatka sladkorja ter temperature na prirast biomase. Prav tako je prikazano določanje najprimernejšega časa fermentacije medija z vodnimi kefirnimi zrni. Opisani so različni načini sušenja ter ponovna aktivacija vodnih kefirnih zrn. Pri izvedbi eksperimentalnega dela smo uporabljali gravimetrično metodo. Fermentacijo medija z biomaso smo izvajali v reagenčnih steklenicah. Naše glavne ugotovitve so bile, da je najprimernejši čas fermentacije sladkane vode z vodnimi kefirnimi zrni 48 h, pri čemer je poskuse najbolje izvajati v vodi po reverzni osmozi pri 25 °C, ob uporabi 25 g sladkorja (glede na 10 g biomase vodnega kefirja). Mešanje pri tem ni potrebno. Zrna vodnega kefirja je najbolje sušiti pri sobni temperaturi (po sušenju 4 d se zrna aktivirajo v 48 h) oziroma pri 35 °C (po sušenju 3 d se zrna vodnega kefirja aktivirajo v 24 h – 48 h).

Title:Determination of optimal conditions for reproduction of water kefir biomass
Abstract:The bachelor thesis presents a study on ascertaining optimum conditions for the reproduction of water kefir biomass. It shows the effect of the type of water, mixing, added sugar, and temperature on biomass increase. The thesis discusses the most appropriate fermentation time for water kefir grains medium. It also describes various methods of drying and the reactivation of grains. The experiment was carried out by the use of the gravimetric method. Fermentation of biomass medium took place in reagent bottles. Our main findings suggest 48 hours as the most appropriate fermentation time for sugar water containing water kefir grains. The experiments should be conducted in water reverse osmosis at the temperature of 25 °C, using 25 g of sugar (per 10 g of water kefir biomass). Mixing is not necessary. The grains should dry at room temperature (after four days of drying, the activation of grains happens in 48 hours) or at the temperature of 35 °C (after three days of drying, the activation takes place within 24 to 48 hours).
