Title:Analiza klavne kakovosti bikov iz gospodarskega križanja

Abstract:V diplomski nalogi smo primerjali bike pitance treh v Sloveniji najbolj zastopanih čistih pasem (lisaste-LS, rjave-RJ in črno−bele-ČB) in križance med omenjenimi pasmami in različnimi mesnimi pasmami (LS×M, RJ×M, ČB×M). Podatke za raziskavo smo pridobili iz Centralne podatkovne zbirke Govedo Kmetijskega inštituta Slovenije. V raziskavo smo zajeli več kot 47.000 bikov različnih pasem in križanj, ki so bili zaklani v obdobju treh let (2013–2015). Analizirali smo lastnosti rastnosti (starost ob zakolu, masa trupa, dnevni prirast) in klavne kakovosti (mesnatost, zamaščenost). Primerjava čistih pasem je pokazala boljšo rastnost in klavno kakovost bikov LS pasme v primerjavi z biki RJ in ČB pasme; med slednjima so bile razlike v preučevanih lastnostih zelo majhne. Različni križanci z mesnimi pasmami (LS × M, RJ×M, ČB×M) so se med seboj mnogo manj razlikovali kot čiste pasme, vendar so tudi v tem primeru križanci z LS pasmo dosegali boljše rezultate kot križanci z RJ in s ČB pasmo. Izrazit učinek gospodarskega križanja smo ugotovili pri ČB in tudi RJ pasmi; mesni križanci ČB×M in RJ×M so imeli bistveno boljše rezultate rastnosti in klavne kakovosti kot biki čistih pasem (ČB oz. RJ). Po drugi strani pa so rezultati jasno pokazali, da gospodarsko križanje pri LS pasmi ne prispeva pomembno k izboljšanju rastnih in klavnih lastnosti. Razlike med pasmami in križanji v zamaščenosti so bile v splošnem zelo majhne.

Title:Analysis of carcass quality of bulls of industrial crossbreeding
Abstract:In the present study it was our aim to compare fattening bulls of three most frequent pure breeds in Slovenia (Simmental - SIM, Brown - BR and Holstein - HF) to their crossings with meat breed (SIM×M, BR×M, HF×M). The data were gathered from central cattle data base located at Agricultural Institute of Slovenia. The study comprised over 47,000 bulls of different breeds and crossbreeds, which were slaughtered in the period of three years (2013-2015). The analysis comprised growth performance (age at slaughter, carcass weight, daily gain) and carcass quality (conformation, fatness). The comparison of purebred bulls showed better growth rate and carcass quality of SIM bulls as compared to BR and HF bulls, which showed no major differences in studied traits. Differences among various meat crossings were considerable smaller as compared to pure breeds, but again SIM crossings reached better results than BR and HF crossings. The effect of industrial crossbreeding was most emphasised in HF followed by BR breed, where crossing with meat breeds (HF×M, BR×M) showed significantly better growth rate and conformation compared to purebred bulls (BR and HF). On the other hand, the results clearly showed no major contribution of industrial crossbreeding to growth performance and carcass quality in SIM breed. The differences in fatness among breeds and crossings were minor.
