Title:Izračun hranilne vrednosti živil za pekovske izdelke in testenine ekološke kmetije »Sadonik«

Abstract:Uredba št. 1169/2011 daje tri različne možnosti za pridobivanje povprečne hranilne vrednosti živila. Lahko se opravi analiza živila, lahko se izračuna iz znanih ali dejanskih povprečnih vrednosti uporabljenih sestavin oziroma se izračuna iz splošno veljavnih in sprejetih podatkov. V diplomskem delu smo na željo ekološke kmetije "Sadonik" izračunali hranilne vrednosti za 11 ekoloških pekovskih izdelkov in 8 vrst ekoloških testenin, ki jih kmetija trži kot predpakirane. Z izračunanimi vrednostmi bo kmetija dopolnila obstoječo deklaracijo pekovskega peciva, kruha in testenin. Osnovo za računanje sta predstavljali tako zakonodaja s področja označevanja, kot tudi recepture živil, ki nam jih je posredovala kmetija. Podatke o povprečnih vrednostih smo črpali iz splošno veljavnih in sprejetih podatkov. Vrednostim, ki smo jih dobili s pomočjo izračuna, smo določili meje dovoljenega odstopanja, ki so še sprejemljive v primeru uradne analize živila.

Title:Nutritional Value Calculation for Bakery Products and Pasta from the Organic Farm »Sadonik«
Abstract:Regulation number 1169/2011 gives three different options for obtaining averge nutritional value. Food analysis, calculated from the known or actual averge values of the ingredients used or calculated from generally accepted sources. In the bachelor thesis we calculated the energy and nutritional values for 11 organic bakery and 8 organic pasta products marketed as pre-packed by the organic farm "Sadonik". With the calculated values, the farm will complete the existing product label of bakery products and pasta. The basis for calculations was the labeling legislation and the food recipes provided by the farm. Data on average values were drawn from generally accepted sources. The values obtained from the calculation were determined by the tolerance limits, which are still acceptable in the event of a formal analysis of the food.
