Title:Uporaba aditivov v prehrani

Abstract:V današnjem času potekajo številne raziskave o aditivih v hrani. Preučujejo predvsem vlogo aditivov in njihovih vplivov na zdravje ljudi ter ugotavljajo njihov optimalni vnos. V številnih raziskavah se je pokazal škodljiv učinek uživanja nekaterih aditivov, vendar ne v taki meri, da jih živilska industrija ne bi več uporabljala. V magistrski nalogi je zbran pregled literature s tega področja in rezultati študije uporabe aditivov med izbrano anketirano populacijo v Sloveniji. V anketi, ki je bila izvedena pri naključni populaciji julija 2010 v Sloveniji, smo preučili, kakšno je poznavanje aditivov v živilih. Raziskava je pokazala, da so po mnenju anketirancev aditivi v hrani precej nevarni. Več kot dve tretjini anketirancev ni znalo opredeliti aditive v hrani ali E številke, večji odstotek kot smo pričakovali, pa se zaveda, da so aditivi v hrani. Vloga aditivov pri odločitvi za nek proizvod je različna. Nekateri raje izberejo proizvode z enako kakovostjo in ceno z manj dodatki, oziroma so nekateri celo pripravljeni plačati več za tovrstne proizvode. Velika večina pa bi podprla vpeljavo nove blagovne znamke »brez aditivov«.

Title:Use of additives in food
Abstract:At the present time, intensive research on the role of food additives is being conducted. The study consists of determining the effects of additives on human health and the determination of their optimal intake within food. Numerous researches have shown a lot of harmful effects of some additives, but not so many that the food industry would no longer apply them. The master work presents the results of studies on the use of additives among the selected surveyed population in Slovenia. In the survey, which was conducted on a random population in July 2010 in Slovenia, we had studied the state of knowledge on food additives in the diet of the respondents. The survey has shown that consumers consider the use of food additives as rather dangerous. More than two thirds of the consumers could not define food additives and E numbers. Consumers were also asked whether they were aware of the additive content of certain foods. Most of the people showed greater awareness on this issue than expected. The role of the food additives in the decision process for a certain product is quite diverse. Some consumers prefer products containing less additives among foods of the same quality and price, but there are also some that are willing to pay more for such products. Vast majority would support the introduction of an additive »free food« mark.
