Analysis of the actual general labelling of the prepacked foodstuff in EU and comparison of nutritional value

Opis: EU legislation on the prepacked foodstuff is about to change in a close future. And one of the changes will be the mandatory information in the prepacked foodstuff. From 2010 to 2011 in the laboratory of the faculty of agriculture the nutritional value of different dairy prepacked foodstuff has been analyzed. The results have been compared with the nutritional value of their containers. The comparison shows that 9 of 15 products have higher difference than tolerance permitted in lipid content, and 13 of 15 products have higher difference than tolerance permitted in protein content. Finally, 11 of 15 products have higher difference than tolerance permitted in carbohydrate content. In total, 42 of 45 nutritional values from the products have significant statistical difference.

OPTIMIZACIJA LOGISTIČNIH STROŠKOV Z UVEDBO KONCEPTA

Opis: Sistem dostave, zasnovan na konceptu “milk-run”, skrbi za uskladitev naročil različnih dobaviteljev podjetja in predpostavlja distribucijo, organizirano na enem samem prevozu po vnaprej začrtani poti, ter optimizacijo njegove povratne vožnje, zaključene s povračilom embalaže dobaviteljev. Izraz "milk-run" izhaja iz dolgoletne tradicije prodaje in distribucije mleka na zahodu Amerike, kjer so podjetja mlečnih proizvodov organizirala domicilno razpečavo mleka in nazajšnji prevzem praznih steklenic. Razlogi, ki govorijo v korist uveljavitve takšnega sistema, tičijo v nizkih transportnih stroških, učinkoviti izrabi prostora na kamionu, povečanju discipline dobaviteljev in prevoznikov ter v večji kontroli nad izvedbo prevozov. Za potrebe podjetja BSH Nazarje smo preučili možnost vpeljave modela “milk-run” prevozov in ga aplicirali na distribucijsko verigo tega podjetja, zasledujoč njegove optimizacijske implikacije. Pri operacijah kvantificiranja poti in tovorne zasedenosti prevozov smo uporabili dve uveljavljeni programski aplikaciji, Load Designer in Premium Solver. Pri tem smo minimalizirali dostavne in logistične stroške, jih opremili s finančnimi podatki, in predstavili prihranke, ki rezultirajo iz izbranih primerov kombinacij prevozov. Raziskavo smo zaključili z navedbo generalnih priporočil za optimizacijo prevozov znotraj distribucijske verige podjetja BSH Nazarje in ob tem predstavili idejo uvedbe spletnega portala “Sigma”, portala, ki bi ga bilo mogoče pridružiti že obstoječemu informacijskemu sistemu tega podjetja in na ta način prispevati k optimizaciji njegovega dostavnega sistema. Spričo velikega obsega nabavnih materialov, številnosti dobaviteljev podjetja BSH Nazarje in časovnih omejitev, smo v raziskavi upoštevali le dobavitelje s stalnim sedežem v Sloveniji.

RAZISKAVA SKLADIŠČNEGA POSLOVANJA V IZBRANEM PODJETJU S PREDLOGOM IZBOLJŠAV

Opis: Podjetje SŽ – Centralne delavnice Ljubljana d. o. o. se ukvarja z vzdrževanjem in obnovo tirnih vozil ter s proizvodnjo njihovih komponent. Oskrbovanje proizvodnje podjetja se vrši iz šestih različnih skladišč. Zaradi odprodaje zemljišča, na katerem stoji eno od skladišč, je bilo potrebno poiskati nadomestno lokacijo in pripraviti notranjo ureditev novega skladiščnega prostora. Ob analizah trenutnega stanja skladiščnega poslovanja smo naleteli še na nekatere druge pomanjkljivosti, ki slabo vplivajo na učinkovitost samega proizvodnega procesa. V prvi fazi smo opravili podroben pregled trenutnega stanja skladiščnega poslovanja v podjetju. Na osnovi analiz smo najprej pripravili predloge lokacij novega skladišča, ki smo jih opredelili tako, da smo na njihovi osnovi lahko gradili celotno prenovo skladiščnega poslovanja. Za izbrano lokacijo smo pripravili celovito notranjo ureditev skladišča in predlagali uporabo sodobne skladiščne opreme. V drugi fazi pa smo s pomočjo logističnega orodja »milk run« oblikovali popolnoma nov sistem dostave predmetov dela na posamezna delovna mesta.

Analysis of growth models for batch kefir grain biomass production in RC1 reaction system

Opis: This work describes the statistical analysis of three mathematical models, modified for describing the kefir grain biomass growth curve. Experimental data of time-dependent kefir grain mass increase were used. The propagation was performed in RC1 batch reaction system under optimal bioprocess parameters (temperature, rotational frequency of stirrer, glucose mass concentration) using traditional cultivation in fresh, high-temperature, pasteurized whole fat cow's milk. We compared values of biological parameters obtained by applying the nonlinear regression of experimental data in logistic, Gompertz and Richards models. The most statistically appropriate model was determined using the seven statistical indicators. We established that the kefir grain biomass growth curve during batch propagation under optimal bioprocess conditions can be most successfully described using the Gompertz growth model.

Kefir grains production - An approach for volume optimization of two stage bioreactor system

Opis: The main objective of the present study was to design a continuous two-stage bioreactor system for kefir grains production. Based on the experimental data of time-depended kefir grain mass increase and average pH profile during kefir grains batch propagation, parameters of predictive growth and exponential pH models were initially estimated. Afterwards, the non-linear programming (NLP) optimization problem for estimating the optimal volumes of two unequal in series connected continuously stirred tank bioreactors (CSTB) has been developed. The NLP problem is based on criterion of minimal total holding time (MTHT), kefir grain mass balances in CSTB and parameters of the growth and pH models. The results showed that novel kefir grains production plant with two-stage continuous operation, at capacity, qm,KG,pr=3 kgh-1 and conversion, Xo,2=0.980, would primarily require investment in two CSTB with V1=5.93 m3 and V2=5.62 m3, respectively. Technological and economical authorization for a two-stage continuous bioreactor system was mainly confirmed with a more than five times lower total bioreactor volume compared to one-stage plant.

Quantitative examination of process parameters during kefir grain biomass production

Opis: This article examines the propagation of kefir grains in fresh HTP whole fat cows' milk, with some additions (glucose and bakers yeast). The objective of our work was an experimental determination of the various process parameters relative influence on the propagation and daily kefir grain increase mass, using the Taguchi method for experimental design. The effects of medium temperature, glucose mass concentration, bakers yeast mass concentration and the rotational frequency of the stirrer at four levels were studied. Orthogonal array layout of L16 was selected for the proposed experimental design. All experiments were performed in an automated laboratory reaction calorimeter RC1 (Mettler-Toledo) with the same milk (3.5 % fat). The gravimetric method was used to determine daily kefir grain mass increases. Relative contributions of the proposed influencing process parameters on the daily kefir grains increase mass were estimated by analysis of the variance (ANOVA). The highest increase (51.5 %) was found at the rotational frequency of the stirrer 90 (1/min), at glucose mass concentration 20 g/L, and at mediumtemperature 24 °C. Within the observed range of yeast mass concentrationthis process parameter was found to be insignificant compared to others. The rotational frequency of the stirrer has the highest relative influence on the daily kefir grains increase mass (37.3 %) while glucose mass concentration and medium temperature have lower ones, 18.8 % and 9.9 %, respectively. The remaining fraction represents error influence. The main reason for its relatively high value (34.0 %) is that kefir grains are bulky and awkward to handle. This fact confirms the importance of optimal kefir grains production management.

Optimizacija zalog v podjetju X iz avtomobilske industrije

Opis: Magistrska naloga se osredotoča na upravljanje zalog v podjetju X iz avtomobilske industrije. Namen naloge je optimizacija zalog na področju nemških krožnih voženj v podjetju. Če želi biti podjetje v današnjem času konkurenčno, mora skrbeti, da sledi aktualnim razmeram na trgu. Da je izdelek konkurenčen na trgu, je vse odvisno od njegove prodajne cene, ta pa je odvisna od vseh stroškov povezanih z njegovo proizvodnjo. Največji delež stroškov pa predstavljajo zaloge in zaradi tega jim je treba posvetiti veliko pozornosti. V magistrskem delu se bom posvetil nemškim krožnim vožnjam, katerih se poslužujejo v obravnavanem podjetju. Najprej bom naredil pregled trenutnih krožnih voženj in stroškov vsake posamezne krožne vožnje. Nato bom poskusil na podlagi svojih ugotovitev najti ustrezno rešitev, s katero bi optimizirali trenutne krožne vožnje. Na koncu bom predstavil rešitve in kolikšen bo prihranek stroškov zaradi optimizacije nemških krožnih voženj.

ISOLATION AND IDENTIFICATION OF BACTERIOCINOGENIC STRAIN OF LACTOBACILLUS PLANTARUM WITH POTENTIAL BENEFICIAL PROPERTIES FROM DONKEY MILK

Opis: Abstract: The goal of this study was to isolate and characterize LAB (lactic acid bacteria) with potential beneficial properties for human health. LAB were isolated from donkey milk and characterized based on physiological, biochemical and molecular methods. The isolate that presented highest bacteriocin potential (Lact. plantarum LP08AD) was evaluated for the production of bacteriocin. Bactericidal effect of bacteriocin produced by LP08AD on Listeria. monocytogenes, Enterococus. faecium and Lact. curvatus was shown for actively growing and stationary cells. Bacteriocin from LP08AD adhered at low levels to the producer cells. Presence of plantaricin W gene on the genomic DNA was recorded based on PCR. Good growth of strain LP08AD was recorded in the pH range from 5.0 to 9.0 and LP08AD grew well in the presence of bile acids in concentration below 0.8%. LP08AD demonstrated low attachment ability to the small intestinal epithelial polarised monolayers of H4, PSI and CLAB, with values similar for cells of human and pig origin. In addition, LP08AD showed ability to remove cholesterol. Bacteriocin-producing LP08AD might be useful in the design of novel functional foods with potential probiotic or biopreservation properties.
