Regulation of metabolic changes in shredded cabbage by modified atmosphere packagingAndrej Plestenjak

Abstract: The influence of different storage conditions on the storability of packaged shredded cabbage has been studied. The cabbage cultivar Fieldrocket was cut and packaged in glass jars and in polyethylene (PE) or polypropylene (PP) film. Several initial atmospheres were established within the packaged cut cabbage: 100 % N2, 5 % O2/95 % N2, 10 % O2/90 % N2, normal atmosphere (NA), 70 % O2/30 % N2 and 100 % O2. Samples were stored at two different temperatures of 0 and 10 °C for 7 days. Variation in CO2 and O2 concentrations was higher at 10 °C compared to 0 °C and the highest at the atmosphere consisting of 70 % O2/30 % N2. A decrease of O2 below 3–5 % and an increase of CO2 above 2–5 % in the packed product resulted in the appearance of anaerobic metabolism. An initial atmosphere consisting of 100 % O2, and a storage temperature of 0 °C resulted in delayed anaerobic metabolism compared to other atmospheric conditions and storage temperature of 10 °C. Rinsing of fresh cut cabbage also resulted in lower accumulation of acetaldehyde and ethanol. A higher variation in CO2 and O2 concentrations, and consequent accumulation of anaerobic metabolites had a negative influence on the sensorial properties of the cut cabbage. The higher permeability of PE film compared to PP and glass enabled faster exchange of CO2 and O2, which resulted in lower accumulation of anaerobic metabolites. However, a higher O2 concentration had a negative influence on the colour of fresh-cut cabbage. The best results were achieved by packing the fresh-cut cabbage in PE film with an initial atmosphere of 100 % O2 and stored at 0 °C.

In vitro selection and characterization of new probiotic candidates from table olive microbiotaCristian Botta

Abstract: To date, only a few studies have investigated the complex microbiota of table olives in order to identify new probiotic microorganisms, even though this food matrix has been shown to be a suitable source of beneficial lactic acid bacteria (LAB). Two hundred and thirty eight LAB, belonging to Lactobacillus plantarum, Lactobacillus pentosus and Leuconostoc mesenteroides species, and isolated from Nocellara Etnea table olives, have been screened in this survey through an in vitro approach. A simulation of transit tolerance in the upper human gastrointestinal tract, together with autoaggregation and hydrophobicity, have been decisive in reducing the number of LAB to 17 promising probiotics. None of the selected strains showed intrinsic resistances towards a broad spectrum of antibiotics and were therefore accurately characterized on an undifferentiated and 3D functional model of the human intestinal tract made up of H4-1 epithelial cells. As far as the potential colonization of the intestinal tract is concerned, a high adhesion ratio was observed for Lb. plantarum O2T60C (over 9%) when tested in the 3D functional model, which closely mimics real intestinal conditions. The stimulation properties towards the epithelial barrier integrity and the in vitro inhibition of L. monocytogenes adhesion and invasion have also been assessed. Lb. plantarum S1T10A and S11T3E enhanced trans-epithelial electrical resistance (TEER) and therefore the integrity of the polarized epithelium in the 3D model. Moreover, S11T3E showed the ability to inhibit L. monocytogenes invasion in the undifferentiated epithelial model. The reduction in L. monocytogenes infection, together with the potential enhancement of barrier integrity and an adhesion ratio that was above the average in the 3D functional model (6.9%) would seem to suggest the Lb. plantarum S11T3E strain as the most interesting candidate for possible in vivo animal and human trials.

Prirojene motnje presnove v obdobju novorojenčkaSilva Burja

Abstract: Kadar pri akutno in težje obolelem novorojenčku nimamo zanesljive diagnoze, moramo pomisliti tudi na možnost prirojene motnje presnove. Poleg skrbne anamneze in natančnega kliničnega pregleda so za diagnozo potrebni tudi biokemični in molekularno genetični testi. Osnovne diagnostične preiskave krvi(kompletna krvna slika, elektroliti, glukoza, mikroacidobazno ravnotežje, kreatin-kinaza, trigliceridi, laktat in amoniak) ter urina (glukoza, beljakovine in ketonska telesa) nam dajo prve informacije o vrsti presnovne motnje, kar terja nadaljnjo specifično diagnostiko. Vse metabolične bolezni skupaj zajemajo najmanj 1 % vseh novorojenčkov, kar bi za Slovenijo pomenilo okoli 200 otrok letno. Velika večina otrok s prirojeno presnovno boleznijo ostane neprepoznana. Pravočasna prepoznava teh bolezni bi lahko v marsikaterem primeru sprožila pravočasno zdravljenje. Normalen rezultat neonatalnega presejanja ne izključuje možnosti prirojene presnovne bolezni, saj z njim odkrivamo le omejeno število teh bolezni.

Abstract: The architecture concept of plug-in is based on the duality of the infrastructure system and units or elements connected to it. In the context of megastructures, the concept was most vividly characterised by works of Archigram and Japanese Metabolists in the 1960s and early 1970s. Blurring the boundary between the building and the city, the plug-in concept outgrew architectural boundaries and was slowly transformed into an urbanistic concept. The paper presents the cultural context relevant to contemporaneity, which influenced specific development of the technology-driven concept of plug-in in the British Archigram Group and Japanese Metabolists. Based on the aesthetics of change and incompleteness, which was characterised by similar architectural manifestations despite entirely different cultural backgrounds, the plug-in concept foreshadowed social transformation based on freedom, individualisation and mobility in an utopian manner and held a promise of urban development with adaptability to unpredictable needs and desires of residents, who would become its co-creators with an active approach. Although the revolutionary sixties are quite some time behind, the plug-in concept in its commodified form has become and remained operational and relevant at least on the metaphorical level; in the contemporary space it is evident primarily in urbanism and not as much in its original architectural form.

Energy metabolism, growth performance, body composition, meat quality and boar taint compounds in immunocastrated pigsNina Batorek Lukač

Abstract: In recent years, immunocastration, a vaccination against gonadotropin releasing hormone, has been proposed as an alternative to surgical castration of intact male pigs without anaesthesia. However, the effects of immunocastration on metabolic changes, nutritional requirements and growth potential have not been quantified. Thus in the present thesis, the meta-analytical approach was used to quantitatively synthesize the effects of immunocastration and four studies were conducted to evaluate the effects of quantitative and qualitative feed restriction on growth performance, heat production and energy metabolism, carcass and meat quality. Results show that boar taint compounds are dramatically reduced in immunocastrates, still they remain slightly higher than in surgical castrates. Immunocastrates are less feed efficient, fatter but grow more rapidly and may have better meat quality than entire males. Compared to surgical castrates, immunocastrates have superior performance with no difference in meat quality. It is more economical to fatten immunocastrates than surgical castrates, but production costs and carcass quality are less favourable than in entire males because of the huge increase in voluntary feed intake during the weeks preceding slaughter. Applying quantitative feed restriction after active immunization did not significantly affect growth performance or carcass composition; however, restrictively fed immunocastrates were closer to entire males, whereas ad libitum fed immunocastrates were closer to surgical castrates. Meat quality is also unchanged by the restriction. However, higher incidence of carcass lesions in restricted immunocastrates together with higher plasma cortisol level indicates more aggression prior to slaughter and can be considered as a negative aspect of the quantitative restriction. Total heat production, assumed to be the major factor contributing to the differences in feed efficiency of pigs, is changed after the immunocastration. Additional energy retained due to higher feed intake is directed towards lipid deposition. Increased fatness of immunocastrates is a result of increased daily lipid deposition caused by higher energy intake, lower fasting heat production and improved energy retention. Hence, dietary energy intake should be limited after immunocastration. Moreover, according to the results of the nitrogen balance study, dietary crude protein content could also be decreased. By reducing net energy concentration of the diet up to 10 % using higher fibre content, similar energy efficiency (gain to net energy intake ratio) may be achieved, with an advantage in terms of reduced lipid deposition, and no effect on growth rate after effective immunization. This is particularly important when immunocastrated pigs are fattened to higher body weights, i.e. when longer delays between full immunization and slaughter are practiced.
